Sometimes you just need a massive portion of veggies, but can’t be bothered to actually do anything fancy. That’s exactly when this recipe comes in: delicious roasted vegetables with a garlic sour cream dip.



You need

a few small potatoes or two larger ones
1 paprika (red or yellow)
2 onions (I prefer white ones)
3 carrots
1 zucchini
any other vegetable you want

olive oil
salt, pepper
roasted potatoes spice mix
BBQ spice mix

1 cup sour cream
2 garlic cloves
salt, pepper
BBQ spice mix


You do

Cut all the vegetables to roughly the same size and put them in a bowl. Mix them with olive oil and all the spices.

Spread them on a baking tray and put them in the oven for 30 minutes at 200°C.

For the dip, mix the sour cream with the garlic and the other spices.

I feel like this is one of the shortest recipes I’ve ever posted, but as I said at the beginning, sometimes you just need a quick one.

It’s also one of my favourite recipes and I’ve made it a couple of times by now. I still want to try to include more vegetables to mix things up a bit. We’ll see how that goes.

    Da ich mich ja selbst hauptsächlich vegetarisch ernähre, ist es immer wieder toll, vegetarische Rezepte zu entdecken. Und ich liebe Knoblauch einfach über alles, vor allem zu Roasted Veggies. Ich sitze gerade in der Uni und habe durch diese schmackhaften Bilder sofort Hunger bekommen. Aber leider muss ich noch ein bisschen durchhalten :(
